When I first started eating gluten free, the first foods I missed the most were sweets. I do not eat sweets on a regular basis, but when I knew I could not eat the ones I was accustomed to, it seemed like my tastebuds went into overdrive. I HAD to have something sweet!!!  Now I have baked cookies and cakes in the past. In fact, I have a lot of requests for my Cherry Sundrop pound cake from  friends wanting to order one  for special events and pay me to make it.  So now that  I am gluten free, what am I going to do?  I researched on line about gluten free flours, coconut, almond, rice etc, etc.  This seemed so confusing and involving so much experimenting, to say nothing of the cost.  If you have been gluten free for any length of time, you know how expensive it can be.  So I was really struggling with making my own flour for baking.

  1. Thanks so much for providing these helpful products on your site. I am wondering if there are any nightshade free, gluten free flours that I can use in baking. I cannot have Potato and have been noticing that a lot of gluten free products use potato starch/flour. So I can’t have them. Hoping that maybe, just maybe, you’ll know of something that would work since you’re an avid baker as well! Many thanks in advance, either way.

    • I have a friend that avoids night shades. This is the blend she uses and I have tried it and it is a good blend. She uses full bags of brown rice, white rice, sorghum, teff, tapioca and coconut. You will need a bigggg bowel and a big whisk. Mix everything really well and after you do that whisk it some more just to be sure, at least that is what I do, then I store it in a big glass jar.
