Broccoli Salad Recipe so tasty, so simple and so gluten free!
IT. IS. HOT!
But then again, it IS Summer!!
Why do I act like heat in the South is a big freakin surprise??!! Don’t answer that!
So, I’ve loudly announced established it’s hot outside and it radiates into the kitchen where most of us go to find something to eat.
While a great many of us tend to eat less in the high heat of summer, we do still get hungry and have to consume some type of food.
In summer, I strive for food items which are simply prepared, have no heat (spicy or oven) involved, are tasty, do not require the oven being turned on, consist of healthy ingredients, and no cook top being heated up! Did you catch my trend there?
Enter Broccoli Salad!
I have always loved broccoli and now I can see it is a generational love: my mom, myself, my daughter (as young as age 2 would ask for trees to eat! her description of broccoli) and now my 8 and 3 year old nephews. The three year old will pull out the chair at the table, sit down and ask for ‘bwoccoli, pwease’!! I just love that kid!
I love the benefits of broccoli: high fiber, low calorie, low carbohydrate.
Were you aware that 1 cup of broccoli has:
30 calories
5.8 grams of carbohydrates
2.3 grams of fiber
and ONLY 1.5 grams of sugar?

Broccoli Salad is super easy to make! To me, the most difficult part is cleaning up all those little green bits when I am chopping up the small florets!! I really need to find a helpful hint to do a better job with that mess.
I am not sure I have shared that not only do I practice being economical in purchasing my food ingredients but in my food prep also.
I always cook up an entire package of bacon at one time. Hello, who wants to heat up the kitchen, clean up the pan or stove top for 2-4 pieces of bacon? No, I do not have a microwave!
I also chop more onions than a recipe requires so I always have some available for the next recipe. You may call me weird, but it works for me!!
I LOVE this Broccoli salad for several reasons. It has a wonderful crunchy texture, a delicious taste and is gluten free!! I mean, how much more could I want?
In fact, I enjoy this Broccoli Salad so much I have eaten it with my scrambled eggs for breakfast or a late evening snack!
This is the salad that just keeps getting more tasty the longer the flavors have to blend!
So, if you are needing a cool refreshing summer dish, Broccoli Salad would be the ticket.
Gluten free, crunchy sweet deliciousness, cooling in this summer heat (to make and eat!)

- 2 broccoli heads, cut into small florets
- ½ lb bacon*
- ½ red onion, diced
- 1 cup mayonnaise
- ½ cup sugar
- 1 Tbsp white vinegar
- Mix the mayonnaise, sugar and vinegar together.
- Toss in broccoli, bacon and onion until evenly coated with mayonnaise mixture.
- Refrigerate for at least 2 hours or over night.
- Serve as is or add sunflower seeds, raisins or water chestnuts.
