I love baking. I love the process and I really love the results. (Other people enjoying my production is a big plus too!) I think this is one of my all time favorite cakes. Granny Smith apples are my go to apple. I like their tartness and crispness. I find they add something as an ingredient in every recipe I have tried. This cake meets my requirements: Granny Smith apples, easy to prepared and doggone good. Make one for your family soon, and sit back and bask in the praise!
- 3 cups Pamela's Artisan Flour Blend
- 2 tsp pumpkin pie spice
- 1 tsp baking powder
- 1 tsp baking soda
- ¾ tsp salt
- 2 cups chopped peeled Granny Smith apples (about 2 medium)
- 2 tsp orange zest
- 3 eggs
- 1 cup granulated sugar
- ¾ cup honey
- ¾ cup oil
- ½ cup brewed coffee, cooled
- Frosting
- ½ cup powdered sugar
- 3-4 tsp orange juice
- Preheat oven to 325 degrees. Spray tube pan with nonstick cooking spray.
- Combine flour, pumpkin pie spice, baking powder, baking soda and salt in small bowl; set aside.
- In large bowl, beat eggs with electric mixer. Add sugar, honey, oil and coffee; beat until smooth. Add flour mixture; beat just until combined. Fold in apples and zest. Pour batter into pan.
- Bake 1 hour or until wooden pick inserted near center of cake comes out clean.
- Cool cake in pan 10 minutes. Loosen from sides and center tube. Invert onto cooling rack and cool completely. Combine frosting ingredients and spread over cooled cake.
I can taste the apples. Very nice
