My two greatest loves in the world of food is coffee and chocolate!
Chocolate in the form of fudgesicles as a child, chocolate chip cookies, brownies, strawberries dipped in chocolate, chocolate pudding, my Grandmom’s Mississippi Mud cake, chocolate sheath cake…well, you get the idea, I LOVE chocolate!
And even though I am totally against commercial holidays (do you really need to wait until February 14th to show me you love me by some act of kindness in the form of flowers or candy or whatever the retailers are pushing selling this year?). To me an expression of love, besides chocolate of course, can best be shown in the unexpected: a wild flower you saw on your way home, a video you know I would enjoy or a magazine or book that made you think of me.
Back to this glorious form of love:

Looking for a decadent chocolate dessert that is gluten and dairy free?
LOOK NO FURTHER!
- 1 box Better Batter Chocolate Cake Mix or your favorite gf chocolate cake mix
- 1 box (4.5 ounces) Dr Oetker Organics Chocolate Pudding Mix
- 4 large eggs
- ½ cup warm water
- ½ oil
- 1 cup So Delicious Plain Cultured Coconut Milk Yogurt
- 1½ cups Enjoy Life Semi Sweet Chocolate Chips
- Preheat oven to 350 degrees.
- Mix together the cake mix, pudding, eggs, water, oil and yogurt.
- Blend well.
- Add in chocolate chips.
- Pour batter into a greased bundt pan.
- Bake 40-50 minutes or until a cake tester comes out clean.
- Let cake cool, preferably overnight. It will fall apart if you do not let it cool enough.
