Nothing is better than a tall glass of ice cold lemonade in the heat of summer. I have drank so much lemonade this summer, I would not be surprised if my skin turned yellow!! I decided I might need to back off on the lemonade. But what to do about my lemon craving?
Don’t go there, it’s not THAT kind of craving. I just love the crisp, tartness of lemons. Out came the magic cookbook, cookie to be exact, and be still my heart, lemon cookies we will make.
These cookies had the buttery goodness you want in cookies, but the crisp, tart zestiness of lemons.
These lemon cookies are light and refreshing. They also hit the lemon craving button right on the head!
Try these gluten free, dairy free delicious lemon cookies for a real summer treat… or heck make them in the dead of winter when you are yearning for that summer sun.
- ½ cup (1 stick) butter, softened (use vegan butter to make dairy free)
- 1 cup granulated sugar
- ½ teaspoons gf vanilla extract
- 1 whole egg
- 1 teaspoon lemon zest
- 1 Tablespoon fresh lemon juice
- ¼ teaspoons salt
- ¼ teaspoons baking powder
- ⅛ teaspoons baking soda
- 1-½ cup Pamela's Artisan flour blend
- ½ cups powdered sugar
- Preheat oven to 350 degrees. Grease light colored baking sheets with non-stick cooking spray and set aside.
- In a large bowl, cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest, and juice. Scrape sides and mix again. Stir in all dry ingredients slowly until just combined, excluding the powdered sugar. Scrape sides of bowl and mix again briefly. Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on baking sheet and repeat with remaining dough.
- Bake for 9-11 minutes or until bottoms begin to barely brown and cookies look matte {not melty or shiny}. Remove from oven and cool cookies about 3 minutes before transferring to cooling rack.
These sound amazing. But I’m wanting to make cut out cookies, do you think these would work??
It might be tricky rolling the dough out but I think you should be able to make cut out cookies.
