I have had several friends ask for some fish recipes. Don’t get me wrong, I like fish but the smell in the house after preparing it is a big turnoff. Well, this recipe puts a wonderful herb aroma in the air. Not only does this dish smell divine it tastes so good.
My pickiest eater came back for seconds! The salmon is so moist and flakey. The whole process for this delicious dish is simple, easy and quick. I served it with a squeeze of lemon, some slaw and a glass of Southern sweet tea. Oh yeah, this will be a dish I prepare again.
- ⅛ cup dried parsley
- 2 teaspoons dried rosemary
- 2 teaspoons dried tarragon
- 2 teaspoons dried oregano
- 2 (6 ounce) salmon fillets
- 2 cloves garlic, minced
- 2 tablespoons oil
- Preheat oven to 350 degrees.
- Combine first 4 ingredients in a shallow dish. Dredge fish in herb mixture (do not dredge skin side).
- Cook garlic in hot oil in a medium ovenproof skillet over medium heat for 30 seconds.
- Add fish, coated side down, and cook 3-4 minutes or until browned on coated side. Be careful not to cook too long because you will have burnt tasting herbs.
- Turn salmon, skin side down, in skillet and place, uncovered, in oven.
- Bake for 5 minutes or until fish flakes with a fork.
