Herb Crusted Salmon

Ingredients
  • ⅛ cup dried parsley
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried tarragon
  • 2 teaspoons dried oregano
  • 2 (6 ounce) salmon fillets
  • 2 cloves garlic, minced
  • 2 tablespoons oil
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine first 4 ingredients in a shallow dish. Dredge fish in herb mixture (do not dredge skin side).
  3. Cook garlic in hot oil in a medium ovenproof skillet over medium heat for 30 seconds.
  4. Add fish, coated side down, and cook 3-4 minutes or until browned on coated side. Be careful not to cook too long because you will have burnt tasting herbs.
  5. Turn salmon, skin side down, in skillet and place, uncovered, in oven.
  6. Bake for 5 minutes or until fish flakes with a fork.
