Sweet and Spicy Wings

I have a confession:  I LOVE spicy foods.
In preparing my Super Bowl menu, I knew I had to include at least one spicy item.
This recipe was a definite touchdown with the field goal and my taste buds were doing the end zone victory dance!!

Sweet and Spicy Wings

Ingredients
  • ⅓ cup apricot perserves
  • 1 Tablespoon lime juice
  • 1 jalapeno pepper, seeded and finely chopped (leave some seeds if you want more heat)
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • 1 garlic clove, pressed
  • 18 chicken wings or drumettes
  • 1 Tablespoon Olive oil
Instructions
  1. Place perserves in small bowl. Microwave on high 30-60 seconds or until melted into a liquid. Add lime juice and jalapeno pepper. Whisk until well blended and set aside.
  2. Combine chili powder and salt. Rub garlic over chicken then sprinkle evenly with chili powder mixture.
  3. Heat a large enough skillet to hold chicken over medium-high heat until hot. Put 1 Tablespoon Olive Oil in skillet.
  4. Add chicken, cook until done.
  5. Brush evenly with glaze, turn heat down to low. Continue to turn and baste with glaze until all glaze is used.
 

Personally, I do not know how well or long these babies keep because they are always consumed quickly!
