What’s not to like about this salad? I have always liked the taste of Quinoa and its healthy properties are just a bonus. Quinoa is a wonderful source of protein, fiber and calcium. This is a great light, but filling, dish. It was the perfect food for me after the heavy food of the holidays.
I especially like this salad in the summer when there is an abundance of fresh produce.
In case you can’t tell, I love this colorful salad.
Greek Quinoa Salad Gluten Free, Dairy Free, Vegan

Ingredients
- 3 tbsp white wine vinegar
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 clove garlic, minced
- ¼ tsp salt
- ⅛ tsp black pepper
- 1 English cucumber (seedless), peeled, halved and sliced
- 1 pint grape tomatoes, halved
- ½ large red onion, chopped
- 2½ cups cooked quinoa
- 4 cooked chicken breast, diced (optional)
- ¼ cup feta cheese (optional)
Instructions
- In a large bowl, whisk together vinegar, lemon juice, oil, garlic, salt and pepper. Stir in cucumber, tomatoes and onion; mix to combine. Let stand 10 minutes.
- After 10 minutes add quinoa, stir to combine. If using chicken add at this time too.
- Top with feta cheese (optional).
