Greek Quinoa Salad Gluten Free, Dairy Free, Vegan

Ingredients
  • 3 tbsp white wine vinegar
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ⅛ tsp black pepper
  • 1 English cucumber (seedless), peeled, halved and sliced
  • 1 pint grape tomatoes, halved
  • ½ large red onion, chopped
  • 2½ cups cooked quinoa
  • 4 cooked chicken breast, diced (optional)
  • ¼ cup feta cheese (optional)
Instructions
  1. In a large bowl, whisk together vinegar, lemon juice, oil, garlic, salt and pepper. Stir in cucumber, tomatoes and onion; mix to combine. Let stand 10 minutes.
  2. After 10 minutes add quinoa, stir to combine. If using chicken add at this time too.
  3. Top with feta cheese (optional).
