I have to confess, I am a big fan of casseroles. I choose casseroles that are easy and taste delicious.
There is the dilemma; most casseroles have some type of cream soup as an ingredient. And prepared cream soups have gluten and cow’s milk.
What to do?
Make my own gluten free/cow’s milk free cream soup!!
It is so easy and so beautiful, yes beautiful, once it is finished. I make this ahead and either refrigerate or freeze.
So, don’t give up any casserole calling for a cream soup; make your own!
Cream Soup Gluten Free Dairy Free

Ingredients
- 2 Tablespoons butter (use vegan butter to make dairy free)
- 2 Tablespoons gluten free flour
- 1 cup of liquid
- salt and pepper to taste
Instructions
- Melt butter in pan
- Add the flour
- Whisk it in and heat until smooth
- Add liquid a little at a time to prevent lumps
- Cook and stir about 3 minutes until smooth and heated through.
- The longer it cooks the thicker it becomes.
Notes
Cream of Chicken-add half milk or water and half chicken broth. You can add chicken bits if you like.
Cream of Mushroom-cook up some chopped mushrooms in butter, then sprinkle with flour and proceed. I use water for my liquid.
Cream of Celery-soften finely chopped celery in butter, then proceed. I use water for my liquid.
