Cauliflower Casserole Gluten Free

I tend to prefer cauliflower steamed as a vegetable as opposed to eating raw.  I really do not even use it in a salad.
This casserole cooks the cauliflower to the consistency I like, not raw but not mushy.
The gluten free bread crumbs and cheese take the casserole to a whole new level.
This is a much repeated dish in my house.

Ingredients
  • 1 large head cauliflower, cut into small florets
  • ½ cup melted butter
  • ¼ cup grated parmesan cheese*
  • 1 cup gluten free Italian seasoned bread crumbs
  • 1 pinch of salt
  • 1 teaspoon crushed red pepper flakes
  • 1 cup shredded cheddar cheese*
Instructions
  1. Preheat oven to 350 degrees.
  2. Bring 2 inches of water to a boil in a medium saucepan. Add cauliflower, cover,
  3. and cook for about 10 minutes. Drain, and place in a 2 quart casserole dish.
  4. In a small bowl mix together butter, Parmesan cheese, bread crumbs, salt, and red pepper flakes. Sprinkle mixture over cauliflower, and top with Cheddar cheese.
  5. Bake in the preheated oven for 20 minutes, or until cheese is melted and bubbly.
  6. *I use cheese made from goat or sheep's milk
