I tend to prefer cauliflower steamed as a vegetable as opposed to eating raw. I really do not even use it in a salad.
This casserole cooks the cauliflower to the consistency I like, not raw but not mushy.
The gluten free bread crumbs and cheese take the casserole to a whole new level.
This is a much repeated dish in my house.
Cauliflower Casserole Gluten Free

Ingredients
- 1 large head cauliflower, cut into small florets
- ½ cup melted butter
- ¼ cup grated parmesan cheese*
- 1 cup gluten free Italian seasoned bread crumbs
- 1 pinch of salt
- 1 teaspoon crushed red pepper flakes
- 1 cup shredded cheddar cheese*
Instructions
- Preheat oven to 350 degrees.
- Bring 2 inches of water to a boil in a medium saucepan. Add cauliflower, cover,
- and cook for about 10 minutes. Drain, and place in a 2 quart casserole dish.
- In a small bowl mix together butter, Parmesan cheese, bread crumbs, salt, and red pepper flakes. Sprinkle mixture over cauliflower, and top with Cheddar cheese.
- Bake in the preheated oven for 20 minutes, or until cheese is melted and bubbly.
- *I use cheese made from goat or sheep's milk
And I don’t even like cauliflower but this is good
