This recipe is from my great great aunt Bill (Willene was her given name).
She called them cheese bars. The first time she asked me if I wanted some cheese bars I thought, “No way”.
Now, my parents had strict rules about being respectful to adults AND when offered a new food, I had to try it and then decide whether or not I liked or disliked it. I tried them and was hooked. Every time I went to my grandparents, I was hoping she had made some, as she lived next door. You better believe I found plenty of excuses to visit Aunt Bill in the hopes of her having some cheese bars.
I was discouraged to think that being gluten and cow’s milk free would keep me from ever enjoying cheese bars again but this adaptation is right on target.

Ooey Gooey Bars Gluten Free

Ingredients
- 1 Package GF Vanilla Cake Mix
- 1 Stick of Butter (use vegan butter to make dairy free)
- 3 Eggs
- 8 ounces Cashew Cream
- 1 pound Powder Sugar
Instructions
- Mix cake mix, butter and 1 egg together. Pour into a greased 9x13 pan
- Mix cashew cream, powder sugar and 2 eggs together. Pour on top of cake mixture in pan.
- Bake 350 degrees for 30 - 40 minutes
