Homestyle Potatoes Recipe

Potatoes and bell pepper and onions, OH MY!!  What a heavenly dish!
I’m not going to lie… I LOVE LOVE LOVE dining out for breakfast!  Pick an occasion, and I’ll be there faster than you can say grits.
I love to try dishes that are a speciality to the restaurant. And when I am dining out,  I always prefer the local mom and pop’s eatery whether I am in or out of town.
I believe their food is made and served with love, because let’s be honest, if you are going to be in the restaurant business, you better love what you are preparing.
Since they are not part of a chain, you don’t get assembly line food, but unique and delicious almost home cooked selections.
Enough of the soapbox,  I am always on the lookout for new recipes and I do love a fantastic  breakfast potato dish.
This recipe is  combination of a lot of the breakfast potato plates I have enjoyed over time.
And again, I strive for the easy to prepare and good to eat.
How can you go wrong with the flavorful combination of potatoes, onions, bell pepper and a little smoked paprika?  I mean the smell alone is worth it!
This recipe is so easy (and has been known to wake people up in my house, just by the aroma!)
This dish is a great motivator on the weekend…I prepare it, they start coming to the kitchen and once their tummies are full, I present them with the chore list!!
I know, I know I am so devious, but ya gotta use what works!!

Homestyle Potatoes

Ingredients
  • 5 Russet Potatoes
  • 1 Small to Medium Onion
  • 1 Bell Pepper
  • 1½ teaspoons Smoke Paprika
  • Oil for coating pan
  • Salt to taste
Instructions
  1. Cut potatoes into cubes and boil for 10 minutes.
  2. Saute onions and peppers in oil. Set aside
  3. Add some more oil to coat the pan and place a single layer of potatoes in the pan and brown. You want all your potatoes in the pan to be touching the bottom of the pan. Depending on the mount of potatoes and size of your pan will depend on how many times you will have to do this. I placed my potatoes in a pan and set them in the oven on a low temperature to keep them warm.
  4. Once all the potatoes are sautéed add the onions, peppers, smoke paprika and salt to pan. Stir to coat.
