This cake will not only surprise you because of the ingredients but once you try it you WILL BE amazed at how delicious it is.
This will be my go to recipe for chocolate cake from now on!

Surprise Cake Gluten Free

Ingredients
- ½ cup butter (use vegan butter to make dairy free)
- ¼ teaspoon salt
- 1½ cups sugar
- ½ cup cocoa
- 3 eggs
- 1 cup water
- 1 teaspoon vanilla, gluten free
- 1 can (8 ounce) sauerkraut, drained, rinsed, and finely chopped
- 2 cups sifted Pamela's Artisan GF flour blend
- 1 teaspoon gf baking powder
- 1 teaspoon gf baking soda
- Chocolate Frosting
- 1 package (6 ounces) semisweet chocolate pieces (dairy free)
- 1 teaspoon gf vanilla extract
- 4 tablespoons butter
- ¼ teaspoon salt
- ½ cup plain yogurt*
- 2½ - 2¾ cups confectioners' sugar, sifted
- *I used yogurt made from goat's milk. Can substitute with any plain yogurt
Instructions
- Cake
- In large mixing bowl, cream butter and sugar until light. Beat in eggs one at a time, add vanilla. Sift together flour, baking powder, baking soda, salt and cocoa. Add to creamed mixture alternately with water, beating after each addition. Stir in sauerkraut. Pour into greased and floured 9" x 13" baking pan. Bake at 350 F for 35-40 minutes. Cool in pan.
- Frosting
- Melt chocolate and butter. Blend in yogurt, vanilla and salt. Gradually add confectioners' sugar until frosting is of spreading consistency.
- Beat well.
