Mexican Wedding Cookies Gluten Free

I don’t know what it is about these little cookies that entice me so.  Maybe it how cute and petite they are or that they are covered in powder sugar that make them look so decadent. I also really enjoy the small pieces of nut that you get when you bite into this wonderful cookie which was a very pleasant surprise the first time I ever tried this cookie.

I do hope that if you have never had a Mexican wedding cookie that you would consider giving this recipe a try.  They are very easy to make and I hope you are just as surprised and delighted as I was the first time I ever tried this cookie.

Ingredients
  • 8 Tbsp (1 stick) unsalted butter, at room temperature; Use vegan butter to make dairy free
  • ½ cup confectioners' sugar
  • 1 tsp vanilla extract
  • 1 cup Pamela's Artisan Gluten Free flour
  • ⅛ tsp salt
  • ¼ tsp cinnamon
  • 1 cup walnuts or pecans, lightly toasted and ground
Instructions
  1. Preheat oven to 350 degrees.
  2. Cream butter and ¼ cup sugar until fluffy. Add vanilla, reduce speed and gradually add flour, salt and cinnamon. Stir in nuts.
  3. Roll dough into 1 inch balls and place 1 inch apart on baking sheet. Bake for 12 minutes. Let cool on rack for 5 minutes.
  4. Sift remaining sugar over warm cookies until well coated.
