It is hard to believe so little work is involved in this hearty, delicious beef stew.
This is one of those meals I love on a cold day!
Oh, no browning of meat required, everything is dumped in casserole dish what could be more lazy.
Lazy Day Beef Stew Gluten Free Dairy Free

Ingredients
- 2 pounds stew beef
- 4 large carrots, quartered lengthwise and cut into pieces
- 1 can 15 oz tomato sauce
- 1 bay leaf
- 1 Tbsp sugar (optional)
- 3-4 medium potatoes, cut into quarters
- ¼ cup red wine vinegar
- 1 cup gluten free Worcestershire sauce
- 2 onions, thinly sliced
- 1 can peas with liquid
- 1 can (6 ounces) mushrooms (optional), drained
Instructions
- Grease large casserole dish.
- Add beef, carrots, tomato sauce, bay leaf, potatoes, red wine vinegar, ½ cup Worcestershire sauce and onions.
- Cover and bake at 275 F for 4 hours.
- Remove from oven and stir (meat will be dry).
- Add peas, mushrooms, if using, and remaining ½ cup Worcestershire sauce and if necessary a little water and 1 Tbsp sugar or more to taste.
- Cook for 1 hour longer, covered.
- Remove and discard bay leaf.
Lazy day is the prefect name for this.
I did not believe something so easy would be so tasty. This is a definite repeat for me.
