1 English cucumber (seedless), peeled, halved and sliced
1 pint grape tomatoes, halved
½ large red onion, chopped
2½ cups cooked quinoa
4 cooked chicken breast, diced (optional)
¼ cup feta cheese (optional)
Instructions
In a large bowl, whisk together vinegar, lemon juice, oil, garlic, salt and pepper. Stir in cucumber, tomatoes and onion; mix to combine. Let stand 10 minutes.
After 10 minutes add quinoa, stir to combine. If using chicken add at this time too.
Top with feta cheese (optional).
