Gluten Free Strawberry Shortcake Cookies

Ingredients
  • 4 oz cream cheese, room temperature
  • 10 Tbsp butter, softened
  • 1 cup sugar
  • 1 egg
  • 2 cups gluten free flour*
  • ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp baking soda
  • 1 cup white chocolate chips
  • Zest of one lemon
  • 1½ cups strawberries, diced into tiny pieces (could use frozen)
Instructions
  1. Preheat oven to 350 degrees.
  2. Lina a baking sheet with parchment paper and set aside.
  3. In a large bowl cream together cream cheese and butter.
  4. Add in sugar and egg.
  5. Add in flour.
  6. Add the lemon zest, baking powder, salt and baking soda.
  7. Mix until dough forms.
  8. Fold in chocolate chips and strawberries.
  9. Using a small scoop, scoop out the cookie dough and place on prepared baking sheet about 1 inch apart.
  10. Bake for about 10 minutes.
  11. Transfer cookies to a cooling rack.
  12. Store in airtight container in the fridge.
Notes
*I use Pamela's Artisan Flour Blend or Better Batter All Purpose Flour Mix
