Gluten Free Corn Chowder
- 1 small onion, diced
- ½ red bell pepper, diced
- 1 large red potato, diced
- 3 Tbsp butter
- 3 Tbsp gf flour
- 14 ounces frozen or canned corn (I used frozen fire roasted corn)
- 3 cups almond milk or any milk that you would like to use
- Salt and Pepper to taste
- In a medium size pot melt butter.
- Add onion, bell pepper and potato.
- Cook, stirring occasionally, for about 10 minutes or until potatoes are tender.
- Stir in flour.
- Add corn and liquid if using canned corn. If using frozen corn add ½ cup water.
- Stir until liquid is completely mixed with flour.
- Add milk and stir until smooth.
- Stir occasionally for 10-15 minute or until it begins to boil.
- Season to taste with salt and pepper.
- Continue to cook on low for 10 more minutes.
