Spicy Southwest Lettuce Wrap Gluten Free

- 1½ cups cooked rice
- 1 one pound package spicy sausage (I used an Italian hot chicken sausage)
- 1 15 oz can of black beans drained
- 1 11 oz can of corn with red and green peppers
- 1 10 oz can of Rotel chunky tomatoes and green chills
- Salt and pepper to taste
- Iceberg lettuce leaves
- Prepare rice per label directions
- Brown sausage, breaking it up to form crumbles, and drain
- Mix rice, sausage, and remaining ingredients
- May add more liquid, but not to the point of being soupy because it will not serve well on lettuce leaves.
- Place about 1-2 tbls of mixture on lettuce leaf and serve.
- May garnish with sour cream, salsa and serve with chips.
