Full of your favorite jam wrapped in oatmeal goodness and made into a dessert bar extraordinaire!
You ever have that little, well maybe slightly bigger than little, niggle in your stomach that let’s you know, I need something tasty, preferably sweet….like right NOW? No? Are you serious or is mine the only stomach with a very vocal opinion? I think not, or you can just ignore yours better than me.
Anyway, I had been craving something sweet, not overpowering like “I have gotta eat this whole slice of fantastic cake or pie” to calm down this raging beast known as my stomach. I just want some delicious treat, hopefully, good for me. Is that too much to ask?
I like/prefer sweet oatmeal. My mom cannot understand how she raised me on savory oatmeal and I turned out to like sweet oatmeal (I don’t understand it either, I just like it sweet).
Since I have been trying to control my sweet tooth by fooling it with fruit and smoothies and anything else I can think of that does not come in 3 layers and covered in icing, I began thinking about alternatives and sweet oatmeal came to mind.
In my quest for healthy, I knew oatmeal is an excellent food with a lot of benefits.
Oatmeal is a fantastic source of fiber which lowers cholesterol and reduces the risk of high blood pressure. It also is full of antioxidants, keeps arteries from hardening and stabilizes blood sugar. Oatmeal, in my opinion, is one of those wonder foods because it can help prevent diabetes by regulating insulin and blood glucose levels; boosts our immune system and prevents weight gain. Talk about a win-win, Oatmeal is all around just plain great. And last but certainly not least, Oatmeal is a great alternative on a gluten free diet!
So oatmeal with my favorite jam made into a dessert bar is my snack of choice when the sweet tooth bug bites.
These Oatmeal jam bars are fantastic!! Sweetness from the jam paired with the oatmeal, and depending on how long I bake them, they can be slightly crispy or moist and chewy.
They are the perfect dessert treat without all the guilt of overeating.
Yes, these little Oatmeal Jam bars are pure sweet enjoyment!
They are easy and quick to make. And eaten even faster!!
- ¾ cup gluten free flour
- ⅛ teaspoon baking soda
- ⅛ teaspoon salt
- ⅓ cup quick cooking rolled oats
- 3 Tablespoons packed brown sugar
- ½ teaspoon lemon zest
- 3 ounces cashew cream (recipe is on blog)
- 2 Tablespoons butter softened
- ⅓ cup of your favorite berry preserves (I used raspberry)
- ½ teaspoon lemon juice
- Preheat oven to 350 degrees.
- Grease a 9 by 9 baking pan.
- In a medium bowl stir together flour, baking soda, and salt.
- Stir in oats, brown sugar, and lemon peel.
- In a large bowl combine cashew cream and butter.
- Add flour mixture; beat with an electric mixture until mixture is crumbly.
- Measure out 1 cup of crumb mixture and set aside.
- Press the remaining crumb mixture onto the bottom of baking pan.
- Bake for 20 minutes.
- Meanwhile in a small bowl combine preserves and lemon juice.
- Carefully spread preserves mixture over hot crust.
- Sprinkle with the reserved 1 cup crumb mixture.
- Bake 10-15 minutes or until top is golden brown.
- Cool in pan on wire rack.
Can it be any kind of gluten free flour? Like oatmeal, almond, or coconut flour?
I would think so. I prefer Pamela’s Artisan Blend that I purchase from Amazon. Please let me know which flour you use and how they turn out!
