Crisp autumn air, crunchy leaves and delicious apples. The smell, the texture when you take that first bite of a crisp apple… ah a piece of heaven.
That’s what I was looking for in the perfect fall cake.
I pulled out the cookbooks, consulted my mom and her sisters, tried, tweaked, threw out and started over (too many times to count!!)
But FINALLY, the most beautifully moist apple spice cake came out of my oven. A perfect blend of apples and autumn spices.
This was apple perfection in every bite!!! Oh honey, this is an award winning cake if I do say so myself.
I am not a big raisin fan, but thought I would add them in; well let me tell you, this cake is so doggone good, I forgot the raisins were in there!
Yeah, this is grab a cup of coffee, the newspaper and go sit out on the deck before it gets too cold type of cake.
Warning: once your family tastes this cake, you will have to hide it to have any around for more than 24 hours!!! Yeah, it really is that good.
Deck, lounge chair…I have my coffee, slice of heavenly Apple Spice cake and a book and we are all about to have some serious time together!!

- Cake Ingredients
- 1¾ cups Pamela's Artisan Flour Blend
- 1 Tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon cloves
- 1⅓ cups sugar
- ¾ cup pecans
- ¾ cup walnuts
- ½ cup raisins
- ¾ cup applesauce
- 2 eggs at room temperature
- ½ cup shortening*
- ¾ cup almond milk or any non dairy milk
- 1 teaspoon gf vanilla extract
- Icing Ingredients
- 2 Tablespoons butter at room temperature (use vegan for non dairy option)
- 1 cup powder sugar
- 1 Tablespoon almond milk or non dairy milk
- Cake Instructions
- Preheat oven to 350 degrees. Grease 9x13 cake pan.
- Combine first 6 ingredients in a bowl and stir to combine.
- Combine sugar and shortening with an electric mix.
- Add eggs to sugar mixer, one at a time, until blended and then add vanilla.
- Add flour mixture, applesauce and milk to mixer starting and ending with the flour.
- Fold in nuts and raisins. Pour into greased 9x13 pan.
- Bake for 35 to 45 minutes. Until cake tester comes out clean.
- Icing Instructions
- Mix all the ingredients together until you have a stiff icing. Can add more milk if needed.
- Spread over cake once the cake has completely cooled.
