So I had some mango that was this side of going bad, and ya’ll know I CANNOT stand to waste anything. So I was wondering in what recipe should I use the mango? I searched my mental files and then went to some old recipe books and ta da, I found one I wanted to try. This is the result. It meets my requirements: delish, easy and using ingredients I have on hand. I fixed some cabbage to go with it, but that’s another day, another recipe! Hope you enjoy this Mango Chicken as much as I did.
Mango Chicken Gluten Free Dairy Free

Ingredients
- 4 chicken breast, grilled
- 1 lemon, juiced
- 1 cup orange juice
- 1 mango (peeled, seeded and sliced)
- ¼ teaspoon ginger
- ⅛ teaspoon cinnamon
Instructions
- Grill chicken however you like.
- In a sauce pan, heat lemon juice, orange juice, mango, ginger, and cinnamon.
- Cook and continuously stir until thickened, about 5 minutes.
- Spoon mango mixture over cooked chicken.
