I have been trying to incorporate more good grains in my diet. You know the whole first of the year, I need to lose some holiday weight yada, yada, yada…
Anyway, my goal is to try a new grain, well, one I don’t use very much, make that hardly ever, in my cooking and meal planning at least once a month.
This brown rice casserole met all my requirements: new grain-brown rice, tasty, easy to prepare, tasty, healthy, tasty,gluten free and did I mention tasty?!
Brown rice, onion and chestnuts are a delicous combination and don’t forget those mushrooms.
The chestnuts give it the texture I so love.
So, if you think you are not a fan of brown rice, unless it is stir fry or fried rice, try this easy casserole.
- ⅓ stick butter
- 1 small onion, diced
- 1½ cup rice
- 10 ounces gf beef broth
- 1 cup sliced mushrooms
- 1 small can water chestnuts, drained
- 1½ cups water
- salt and pepper to taste
- Brown onion and mushrooms in butter. Mix all ingredients in large covered casserole dish.
- Bake at 350 degrees fro 45 minutes. Check at 30 minutes to determine if rice is done. If not, cook longer.
