My great-grandmother made a wonderful Raw Apple cake when I was a little girl.
In my memory, I can still taste the bits of apple in the cake.
Unfortunately, I never got a copy of her recipe (if she even had it written down!).
I found this recipe and it sounded close to what I remember. After the revision to gluten free/cow’s milk free, it matches my memory pretty close.

Apple Cake Gluten Free

Ingredients
- 3 tablespoons butter (use vegan butter to make dairy free)
- ½ teaspoon cinnamon
- 1 cup sugar
- ½ teaspoon nutmeg
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 cup plus 2 tablespoons Pamela's Artisan Flour Blend Gluten Free, sifted
- 3 or 4 cups diced raw apples, peeled
- ¾ cup chopped pecans
- ½ teaspoon baking powder
- ½ cup raisins, optional
- ½ teaspoon soda
Instructions
- Cream butter and sugar together. Add beaten egg. Sift flour, baking powder, soda, and spices together and add to butter mixture. Add vanilla extract, diced apples and nuts. Pour into greased 8-inch square pan. Bake 40 to 45 minutes at 350 degrees. Serve warm with ice cream or whipped cream.
