Few things bring back memories of my childhood more than Oatmeal Raisin cookies.
There are no words to describe the feelings I recall coming in the door after school and smelling these cookies.
Or spending the weekend with my grandparents and my grandmother decided to bake these and let me help.
Really, what could be better in life than the happy memories made in childhood than to make more memories and wonderful, tasty cookies with my own child?

Oatmeal Raisin Cookies Gluten Free

Ingredients
- ½ cup (1 stick) plus 6 Tablespoons butter, softened
- ¾ cup firmly packed brown sugar
- ½ cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1½ cups Pamela's Artisan Blend Flour Gluten Free
- 1 teaspoon ground cinnamon
- 3 cups quick or old fashion oats
- 1 cup raisins*
Instructions
- In a large bowl, beat butter and both sugars until creamy.
- Add eggs and vanilla, beat well.
- Combine flour, baking soda, cinnamon and then add to the wet mixture.
- Add oats and raisins, mix well.
- Drop rounded tablespoon of dough onto ungreased baking sheet.
- Bake 350 degrees for 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheet; remove to wire rack.
- Cool completely and store in airtight container.
- *Could substitute dried cranberries or use mixture of raisins and cranberries together.
