Lamb Meat Loaf

Roasted lamb taste in meatloaf base. Blend of Mideast spices and melted feta cheese, topped with tomato sauce makes this a mouth watering entree sure to please.
Ingredients
  • 2½ lbs ground lamb
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 or 3 cloves of garlic, minced
  • 2 large eggs, lightly beaten
  • 1 teaspoon pepper
  • 1 teaspoon garlic pepper
  • 2 teaspoons dried basil
  • ½ teaspoon dried rosemary
  • ½ teaspoon salt
  • 1 (4-ounce) package crumbled feta cheese *
  • ½ cup sliced black olives, chopped
  • 1 (8-ounce) can tomato sauce
  • Garnishes: dried parsley flakes, fresh parsley sprigs
Instructions
  1. Combine all ingredients except tomato sauce. Place in a lightly greased 9 x 5 loaf pan.
  2. Bake at 375 for 1½ hours; remove from pan, and place on a rack in a broiler pan. Pour tomato sauce over top; bake an additional 10 minutes or until done. Garnish if desired.

* I used feta goat cheese
