Turkey Veggie Chili Gluten Free Dairy Free

Ingredients
  • 1 pound ground turkey, browned
  • 1 large white onion, chopped
  • 2 bell peppers, cut into 1 inch pieces
  • 2 tablespoons oil
  • 1 tablespoon chili powder
  • 1 teaspoon chipotle powder
  • 2 teaspoons packed brown sugar
  • 1 teaspoon salt
  • 1 (28 ounce) can whole tomatoes in juice
  • 1 (19 ounce) can black beans, rinsed and drained
  • ½ cup water
  • 2 carrots, coined
Instructions
  1. Cook turkey
  2. Saute onion and peppers in oil in a medium pot over medium heat, stirring occasionally, until golden.
  3. Add spices and brown sugar and cook, stirring, until fragrant, about 1 minute.
  4. Add tomatoes with juice, breaking them up with back of a spoon, then add beans, carrots, water and salt. Simmer, covered for 15 minutes.
  5. Stir in turkey and serve.
Notes
Accompaniments: plain yogurt; slice avocado; chopped white onion; lime wedges
