Gluten Free Peach Cobbler

Ingredients
  • ½ Cup Unsalted Butter (use vegan butter to make dairy free)
  • 1 Cup PamelaŹ¼s Artisan Flour Blend Gluten Free
  • 2 Cups Sugar, divided
  • 1 Tablespoon Baking Soda
  • 1 Cup Almond Milk
  • 4 Cups Fresh Peach Slices
  • 1 Tablespoon Lemon Juice
Instructions
  1. Melt butter in a 9x13 baking dish.
  2. Combine flour, 1 cup sugar, baking soda, and salt; add milk, stirring until dry ingredients are moistened. Pour batter over butter (do not stir).
  3. Bring remaining 1 cup sugar, peach slices, and lemon juice to boil over high heat, stirring constantly; pour over batter (do not stir).
  4. Bake at 375 degrees for 40 minutes or until golden brown. Serve warm or cool.
