Gluten Free Strawberry Shortcake Cookies
- 4 oz cream cheese, room temperature
- 10 Tbsp butter, softened
- 1 cup sugar
- 1 egg
- 2 cups gluten free flour*
- ½ tsp baking powder
- ½ tsp salt
- ¼ tsp baking soda
- 1 cup white chocolate chips
- Zest of one lemon
- 1½ cups strawberries, diced into tiny pieces (could use frozen)
- Preheat oven to 350 degrees.
- Lina a baking sheet with parchment paper and set aside.
- In a large bowl cream together cream cheese and butter.
- Add in sugar and egg.
- Add in flour.
- Add the lemon zest, baking powder, salt and baking soda.
- Mix until dough forms.
- Fold in chocolate chips and strawberries.
- Using a small scoop, scoop out the cookie dough and place on prepared baking sheet about 1 inch apart.
- Bake for about 10 minutes.
- Transfer cookies to a cooling rack.
- Store in airtight container in the fridge.
*I use Pamela's Artisan Flour Blend or Better Batter All Purpose Flour Mix
