Gluten Free Banana Peanut Butter Cookies

Ingredients
  • 1½ cups gf all purpose flour*
  • ½ tsp baking soda
  • 1 ripe banana, mashed (about ½ cup)
  • ⅓ cup firmly packed brown sugar
  • ¼ cup butter, softened
  • ¼ cup creamy or chunky peanut butter
  • 1 large egg
  • 1 tsp gf vanilla extract
Instructions
  1. Preheat oven to 375 degrees.
  2. Combine flour and baking soda in a small bowl.
  3. In a medium mixing bowl, beat together banana, brown sugar, butter and peanut butter until light and fluffy.
  4. Beat in egg and vanilla.
  5. Gradually beat in flour mixture until a dough forms.
  6. Shape dough into 1 inch balls.
  7. Place then 2 inches apart on baking sheet.
  8. Press cookies flat with back of a spoon or fork.
  9. Bake cookies for about 10 minutes until edges are set.
  10. Cool completely.

*I used Better Batter gf all purpose flour
