Gluten Free Rocky Road Pizza

Ingredients
  • ¾ cup softened butter
  • ¾ cup brown sugar
  • 1 egg yolk
  • 1 tsp gf vanilla extract
  • 1½ cups gf all purpose flour (I used better batter)
  • 1 cup chocolate chips (I used Enjoy Life)
  • 1 cup miniature marshmallows
  • ½ cup chopped peanuts
Instructions
  1. Preheat oven to 350 degrees.
  2. Beat butter in a large mixing bowl with an electric mixer.
  3. Add brown sugar and beat until combined.
  4. Beat in egg yolk and vanilla until combined.
  5. Beat in half the flour until blended.
  6. Add remaining flour and beat until blended.
  7. Spread dough in a lightly greased 12 inch pizza pan.
  8. Bake for 20-25 minutes or until golden.
  9. Sprinkle chocolate chips onto hot crust.
  10. Let stand 1 to 2 minutes to soften.
  11. Spread chocolate evenly over crust.
  12. Sprinkle with marshmallows and nuts.
  13. Bake 3-5 minutes until marshmallows are puffed.
  14. Cool in pan on wire rack.
  15. Drizzle chocolate syrup or melted chocolate over cooled pizza.
