Gluten Free Peanut Chocolate Chip Cookies

Ingredients
  • 1¾ cups gf flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ cup peanut butter
  • ¼ cup unsalted butter, softened
  • ½ cup packed light brown sugar
  • ¼ cup plus 1 Tbsp sugar
  • ¼ cup almond milk or any milk
  • 1 egg
  • 1 tsp gf vanilla extract
  • ⅓ cup chocolate chips (I used enjoy life dairy free)
  • ¼ cup finely chopped peanuts
Instructions
  1. Preheat oven to 350 degrees.
  2. In a medium bowl whisk together flour, baking soda and salt.
  3. In a large mixing bowl, beat peanut butter and butter on medium speed until creamy.
  4. Add brown sugar and ¼ cup of the granulated sugar and beat 2 minutes.
  5. Beat in milk, egg and vanilla.
  6. Beat in dry ingredients just until combined.
  7. Stir in chocolate chips and nuts.
  8. Refrigerate dough for 15 minutes.
  9. Preheat oven to 350 degrees.
  10. For each cookie, roll 2 teaspoons of dough into a ball and place on baking sheets 2 inches apart.
  11. With a fork, flatten each ball to a 1½ inch round, making a crosshatch pattern.
  12. Sprinkle a small amount of the remaining sugar on top of each cookie.
  13. Bake for 10 to 12 minute, until lightly browned around edges.
  14. Cool on sheets for 1 minutes.
  15. Transfer to a rack; cool.
