Gluten Free Busy Day Vanilla Cake

Ingredients
  • 2⅔ cups gf flour
  • 1⅓ sugar
  • 4 tsp baking powder
  • 1⅓ cups almond milk or any milk
  • 1 cup butter, softened
  • 2 eggs
  • 2 tsp gf vanilla extract
Instructions
  1. Preheat oven to 350 degrees.
  2. Grease an 9 inch round cake pan.
  3. In a medium mixing bowl combine flour, sugar and baking powder.
  4. Add milk butter, egg and vanilla.
  5. Beat with a mixer on low until combined.
  6. Spread batter in cake pan.
  7. Bake about 30 minutes or until cake tester inserted in middle of cake comes out clean.
  8. Cool cake in pan on a wire rack.
  9. Serve cake warm with whip topping and fresh berries.
