Gluten Free Amaretto Walnut Brownies Recipe

Ingredients
  • 1 cup coarsely chopped walnuts
  • ½ cup amaretto
  • 1 cup butter
  • 8 ounces semi sweet chocolate
  • 5 large eggs
  • 3⅓ cups sugar
  • ¼ cup instant espresso
  • 1 Tablespoon GF vanilla extract
  • 1⅔ cups GF flour
  • ⅛ teaspoon salt
Instructions
  1. Soak chopped walnuts in amaretto for 4-6 hours.
  2. Drain, discarding amaretto.
  3. Melt butter and chocolate in a heavy saucepan over low heat.
  4. Beat eggs, sugar and espresso at medium-high speed with an electric mixer for 8 minutes.
  5. Gradually add chocolate mixture, beating at low speed until blended.
  6. Gradually add vanilla, flour and salt; beating until blended.
  7. Stir in walnuts.
  8. Pour into lightly greased pan.
  9. x9 pan for thin brownies or 8x8 pan for thicker brownies.
  10. Bake 25-35 minutes.
  11. Cool on wire rack.
