Gluten Free Amaretto Walnut Brownies Recipe
- 1 cup coarsely chopped walnuts
- ½ cup amaretto
- 1 cup butter
- 8 ounces semi sweet chocolate
- 5 large eggs
- 3⅓ cups sugar
- ¼ cup instant espresso
- 1 Tablespoon GF vanilla extract
- 1⅔ cups GF flour
- ⅛ teaspoon salt
- Soak chopped walnuts in amaretto for 4-6 hours.
- Drain, discarding amaretto.
- Melt butter and chocolate in a heavy saucepan over low heat.
- Beat eggs, sugar and espresso at medium-high speed with an electric mixer for 8 minutes.
- Gradually add chocolate mixture, beating at low speed until blended.
- Gradually add vanilla, flour and salt; beating until blended.
- Stir in walnuts.
- Pour into lightly greased pan.
- x9 pan for thin brownies or 8x8 pan for thicker brownies.
- Bake 25-35 minutes.
- Cool on wire rack.
