Gluten Free Pistachio Cake

Ingredients
  • Cake
  • 1 box gf vanilla cake mix
  • 2 packages pistachio pudding mix
  • ½ c oil
  • ½ c water
  • ½ c almond milk or any non dairy milk
  • 3 eggs
  • Frosting
  • 1 package pistachio pudding mix
  • 9 ounces So Delicious Coco Whip topping
  • ¼ cup almond milk or any non dairy milk
Instructions
  1. Cake
  2. Preheat oven to 350 degrees.
  3. Coat 8x8 pan with cooking spray.
  4. Blend cake mix and pudding together.
  5. Pour in oil, water and milk.
  6. Mix with a mixer.
  7. Add eggs, one at a time, and mix well.
  8. Pour into prepared pan.
  9. Bake 25 minutes or until cake tester comes out clean.
  10. Cool completely.
  11. Frosting
  12. Mix coco whip, pudding and milk until blended.
  13. Spread evenly on cooled cake.
