Sauteed Kielbasa, Rice and Beans

Ingredients
  • 1 lb turkey kielbasa, sliced
  • 1 Tbsp oil (I used coconut oil)
  • 3 cloves garlic, chopped
  • 1 cup diced onion
  • 15.5 ounce can kidney beans, drained and rinsed
  • 11 ounce can mexican style corn with liquid
  • 1½ cups rice
  • 1 Tbsp tomato paste
  • 1 Tbsp lime juice
  • 2 tsp chipotle seasoning
  • 32 ounce chicken broth
  • 14.5 ounce can diced tomatoes
  • Parsley
Instructions
  1. Heat oil in 4 quart pan.
  2. Add kielbasa and brown for 3-4 minutes.
  3. Add onions and garlic.
  4. Saute for 5 minutes.
  5. Add kidney beans, corn, tomato paste, lime juice, chipotle seasoning, uncooked rice, and broth.
  6. Mix all ingredients.
  7. Gently simmer, covered, over low heat for 20 minutes or until rice is tender.
  8. Remove from heat, add diced tomatoes and mix well.
  9. Sprinkle with fresh parsley and serve.
