Gluten Free Corn Chowder

Ingredients
  • 1 small onion, diced
  • ½ red bell pepper, diced
  • 1 large red potato, diced
  • 3 Tbsp butter
  • 3 Tbsp gf flour
  • 14 ounces frozen or canned corn (I used frozen fire roasted corn)
  • 3 cups almond milk or any milk that you would like to use
  • Salt and Pepper to taste
Instructions
  1. In a medium size pot melt butter.
  2. Add onion, bell pepper and potato.
  3. Cook, stirring occasionally, for about 10 minutes or until potatoes are tender.
  4. Stir in flour.
  5. Add corn and liquid if using canned corn. If using frozen corn add ½ cup water.
  6. Stir until liquid is completely mixed with flour.
  7. Add milk and stir until smooth.
  8. Stir occasionally for 10-15 minute or until it begins to boil.
  9. Season to taste with salt and pepper.
  10. Continue to cook on low for 10 more minutes.
