Peach Muffins Gluten Free Dairy Free

Ingredients
  • 2 cups Pamela's Artisan Flour Blend
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • 2 large eggs
  • ¼ cup melted coconut oil
  • ⅓ cup raw coconut nectar or raw honey
  • 1½ tsps gf vanilla extract
  • 1¼ cups peaches, diced
Instructions
  1. Preheat oven to 350 degrees.
  2. Grease a 12 cup muffin pan.
  3. In a large bowl, whisk together the dry ingredients.
  4. In a medium bowl, whisk together the wet ingredients.
  5. Gently and thoroughly combine the wet ingredients into the dry.
  6. Fold in peaches.
  7. Divide batter evenly in muffin pan.
  8. Bake for 20 to 30 minutes or until a cake tester comes out clean.
