Peach Cake Gluten Free

Ingredients
  • 1 stick butter, room temperature
  • 1 cup sugar
  • 2 large eggs, room temperature
  • 1 teaspoon gf vanilla extract
  • ¾ cup plain yogurt (I used so delicious coconut yogurt)
  • ¼ cup almond milk or any milk
  • 2 cups Pamela's Artisan Flour Blend
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 ripe peaches, sliced and pitted
  • ½ cup brown sugar
  • ½ cup walnuts or pecans
Instructions
  1. Preheat oven to 350 degrees.
  2. Grease a 9x9 pan and set aside.
  3. In a mixer blend sugar and butter until fluffy.
  4. Add eggs, one at a time, to sugar and butter mixture.
  5. Add vanilla, yogurt and milk and mix together.
  6. In a separate bowl mix flour, baking soda, baking powder and salt.
  7. Add flour mixture to wet ingredients and blend.
  8. Pour half of cake mixture in pan and spread out evenly.
  9. Place half the peaches on cake mixture.
  10. Sprinkle with ¼ cup of the brown sugar.
  11. Top with remaining cake mix.
  12. Top with remaining peaches, brown sugar and nuts.
  13. Bake for 35-45 minutes or until a cake tester comes out clean.
