Strawberry Cake Gluten Free Recipe

Ingredients
  • 1 cup (2 sticks) butter, room temperature
  • 1¼ cups granulated sugar
  • 4 eggs
  • 1 teaspoon gf vanilla extract
  • 2¾ cups Pamela's Artisan Flour Blend
  • 2½ teaspoons baking powder
  • 16 ounces frozen strawberries, thawed and pureed
  • 1 quart fresh strawberries, sliced
  • 8 ounces So Delicious CoCo Whip topping
Instructions
  1. Preheat oven to 350 degrees.
  2. Grease two 9-inch round baking pans.
  3. Beat butter and sugar until light and fluffy.
  4. Add eggs, one at a time and vanilla; mix well.
  5. Combine flour and baking powder.
  6. Alternate adding flour mixture and pureed strawberries, mixing well after each addition.
  7. Pour batter evenly into prepared pans.
  8. Bake 25-35 minutes, or until a toothpick inserted in center of cake comes out clean.
  9. Cool 10 minutes in pan on rack; remove and cool completely before decorating.
  10. Spread a thin layer of whipped topping on one of the cakes.
  11. Cover evenly with sliced strawberries and place other cake on top.
  12. Ice the top and side with whipped topping.
