Fiesta Casserole Gluten Free Recipe

Ingredients
  • 2 lbs ground beef or turkey
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • ¼ cup chili powder
  • 1 Tablespoon ground cumin
  • 3 (15 oz) cans tomato sauce
  • 3 (16oz) cans kidney beans, drained and rinsed
  • 6 ounce can sliced black olives, drained
  • Tortilla chips
  • 1 lb cheddar cheese, grated
Instructions
  1. Preheat oven to 350 degrees.
  2. Saute meat over medium-high heat until no longer pink.
  3. Add onion; saute for 3 minutes.
  4. Add garlic; cook for 1 minute.
  5. Add chili powder and cumin; cook, stirring for 2 minutes.
  6. Add tomato sauce, lower heat and simmer for 10 minutes.
  7. Spray a deep 9x13 casserole dish with cooking spray.
  8. Spread half of meat mixture in baking dish.
  9. Then half the beans, half the olives, crunched up tortillas, and half the cheese over meat mixture.
  10. Repeat layering with remaining meat mixture, beans, olives, tortillas, and cheese.
  11. Bake 35-40 minutes, until golden and crispy on top and bubbling.
