Gluten Free Lemon Blondies
- 1½ cups Pamela's Artisan Flour Blend
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup butter, softened
- ¾ cup packed brown sugar
- ½ cup granulated sugar
- 2 eggs
- 2 teaspoons gf vanilla extract
- ½ cup chopped macadamia nuts
- 10 ounces of lemon curd
- Preheat oven to 325 degrees.
- Coat a 9 by 9 baking pan with cooking spray.
- In a medium bowl stir together flour, baking powder, and salt.
- In a large bowl beat butter with an electric mixer for 30 seconds.
- Add brown sugar and granulated sugar.
- Beat for 5 minutes, scraping down sides of bowl occasionally.
- Add eggs, one at a time, beating well after each addition.
- Beat in vanilla.
- Gradually add flour mixture, beating on low until combined.
- Stir in lemon curd and ⅓ of the macadamia nuts.
- Spread batter into prepared baking pan.
- Sprinkle with remaining macadamia nuts.
- Bake 25-30 minutes or until golden and set.
- Let cool on wire wrack.
- Cut and serve
