Black Bean Brownies Gluten Free, Dairy Free, Vegan

Ingredients
  • 1½ cups black beans (15 ounce can, drained and rinsed very well)
  • 2 Tablespoons cocoa powder
  • ½ cup gluten free quick oats
  • ¼ teaspoon salt
  • ⅓ cup pure maple syrup or agave
  • 2 Tablespoons sugar or 4 drops of vanilla stevia
  • ¼ cup oil
  • 2 teaspoons gluten free vanilla extract
  • ½ teaspoon baking powder
  • ½ - ⅔ cup dairy free chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine all ingredients, except for chocolate chips, into a food processor and blend until completely smooth.
  3. Stir in chocolate chips, then pour into a greased 8x8 pan.
  4. Bake for 15-18 minutes and let cool at least 20 minutes.
Notes
I doubled the recipe to make a thicker brownie.
