Strawberry Pie Gluten Free Dairy Free

Ingredients
  • 1 (9 inch) gluten free pie crust, baked*
  • 4 cups fresh strawberries
  • 1 cup white sugar
  • 3 Tablespoons cornstarch
  • ¾ cup water
Instructions
  1. Bake pie crust according to directions.
  2. Arrange 2 cups of strawberries in baked pie shell.
  3. Mash remaining 2 cups of strawberries and combine with sugar in a medium saucepan. Bring to a boil, stirring frequently.
  4. In a small bowl, whisk cornstarch and water together. Gradually stir cornstarch mixture into boiling strawberry mixture.
  5. Reduce heat and simmer until thickened, about 10 minutes, stirring constantly.
  6. Pour mixture over strawberries in pie crust. Chill for several hours before serving.
