Spicy Southwest Lettuce Wrap Gluten Free Recipe

Yippee it’s my favorite meal…well one of them!! Spicy, leaning toward hot, Southwest Lettuce Wraps.  Bring on the chips and margaritas, my taste buds are gonna party!

Tired of those bland meals in the dead of a cold, dark, never ever ever ending Winter?  Hmmm?  Me too!

I needed some serious motivational therapy…aroma wasn’t doing it, expresso wasn’t doing it, favorite shows on NetFlix  was so not happening.  Will spring time with sun and warm breezes, sitting outside on the patio ever get here?
You can tell I’ve got it BAD!

Alright self, (yeah I talk to me a lot, don’t judge!) lets think what food makes you most happy, brings you to life and makes you want to PART-TAY?  Spicy, spicy, spicy and healthy!

Got it! lettuce wraps with some deliciously warm, spice laden meat mixture.

Now we’re talking!!

I dug around in the freezer and pantry and found a couple of warmth producing ingredients.

My favorite local grocery store will sell Hot Italian Chicken link sausage and mark them $2.00 off! So every time that happens, I stock up!

Now these sausages are so full of spice, when you take them out of the package they smell hot!  My kind of food!

I also found some seasoned black beans at the same grocery store, so I stockpile them also.  I drain them but do not rinse off that wonderful seasoning.

On an annual beach trip, we discovered Lettuce wraps at an Asian cuisine restaurant and the rest was history!

On our last trip, the restaurant had closed, so we started coming up with our on lettuce wrap dishes to console our tastebuds.

I had made some close reproductions to the chicken mixture at the restaurant but had never tried spicy… until now!

Y’all this Spicy Southwest Lettuce Wrap is so delicious and so easy to whip up!

I have to tell you I made mine spicy enough to open up my sinuses by using my culinary drug flavor of choice:  Sriracha!!

For those of you not in the need of spicy heat, use just plain sausage and Rotel without green chilis.

But for my heat loving friends, I say go with the basic recipe and add any hot fresh peppers or the Sriracha like I do!

Spring will be here shortly, but for now I am enjoying my Spicy Southwest Lettuce Wraps, listening to beach music and counting the days!

 

Spicy Southwest Lettuce Wrap Gluten Free

Ingredients
  • 1½ cups cooked rice
  • 1 one pound package spicy sausage (I used an Italian hot chicken sausage)
  • 1 15 oz can of black beans drained
  • 1 11 oz can of corn with red and green peppers
  • 1 10 oz can of Rotel chunky tomatoes and green chills
  • Salt and pepper to taste
  • Iceberg lettuce leaves
Instructions
  1. Prepare rice per label directions
  2. Brown sausage, breaking it up to form crumbles, and drain
  3. Mix rice, sausage, and remaining ingredients
  4. May add more liquid, but not to the point of being soupy because it will not serve well on lettuce leaves.
  5. Place about 1-2 tbls of mixture on lettuce leaf and serve.
  6. May garnish with sour cream, salsa and serve with chips.
