CHOCOLATE!! How do I love thee? Let me count the ways.

I love thee in ice cream, cake, hot chocolate and BROWNIES!  Yep, I think my favorite are brownies.

I love the moist dark chocolate fix I get from Brownies…yeah, I admit I am addicted to Brownies and no, thank you I will not enter any type of recovery program.

I love Brownies so much, I have been known to hide and eat them so I did not have to share (not a very proud moment, but true!).

Since becoming gluten free, I have tried chocolate dishes using black beans and avocados.  They were alright but for my brownie addiction, I needed more flavor, more chocolate, more gooeiness!!  I wanted the brownie to end all brownies!! I wanted to be transported to Brownie nirvana.

The recipe search was on.  I looked in family cookbooks, I checked out library books, I hit consignment stores for old cookbooks being sold, I went on line.  People, I’m here to tell you I went on a massive search and at last, I found a couple I thought might work so the baking experiment started. I baked and taste tested, gave to family and friends, tweaked, taste tested again and FINALLY… drumroll please.

I cannot begin to describe the aroma of these brownies while they are baking!!  I literally stood at the oven door window and watched them and the timer.

Yes, I burnt my tongue, but it was so worth it.

These brownies are so full of chocolate flavor, I thought I would have to sacrifice and eat them with ice cream to tone down the taste. Yes, eating ice cream would be a sacrifice because I love plain brownies so much I do not want anything else standing in the way of that chocolate moistness.

These brownies were perfect!! They are moist, not gritty like some gluten free desserts can be, and exploding with chocolate goodness.

I could go on and on, but y’all just need to make some for yourselves!

Pick out your hiding place, get some milk and prepare to make your tastebuds sigh with pleasure!

Ingredients
  • ½ cup butter, at room temperature
  • 1 cup sugar
  • 2 eggs
  • 1 cup Pamela's Artisan Flour Blend
  • ¼ teaspoon gluten free baking soda
  • ¾ cup chocolate syrup
  • 1 teaspoon gluten free vanilla extract
  • ¾ cup chopped nuts
Instructions
  1. Preheat oven to 350 degrees. Grease an 8x8 baking dish.
  2. Cream butter. Add sugar gradually; cream until light and fluffy.
  3. Add eggs, one at a time, beating well after each one.
  4. Mix flour and baking soda together.
  5. Add flour and syrup alternating. Starting and ending with the flour mixture.
  6. Fold in vanilla and chopped nuts.
  7. Bake 30 to 40 minutes or until a cake tester comes out clean.
