Roasted Marinara Sauce how do I love thee?  Let me count the ways:  on gf pasta, on spiralized vegetables, with baked Mozzarella sticks, on cannelini beans, yes, cannelini beans (don’t judge until you try!)  and most of all straight from the dripping spoonful from the food processor! Yummmy, yummy!

This recipe is so unbelievably easy!  I mean how hard is it to wash the tomatoes, no peeling involved and quarter the tomatoes?  Now the onions you do have to peel but then you just quarter them. It does not get much easier than that.

This was the recipe I used all summer when I had too few tomatoes to can but too many to eat alone or on salads before they would go bad.

You can spice this Roasted Marinara Sauce up by adding red pepper flakes or any hot sauce you like during the food processing step.

I like that this is a basic marinara sauce that I can add meat, other spices or veggies to and create a whole new taste.  Rich soup anyone?

Ingredients
  • 2-3 pounds of tomatoes
  • 1 onion
  • 4-6 garlic cloves
  • Olive oil
  • Italian Seasoning, to taste
  • Salt, to taste
Instructions
  1. Preheat oven to 425 degrees.
  2. Line baking sheet with parchment paper.
  3. Cut tomatoes and onion into quarters place on baking sheet in a single layer.
  4. Drizzle with oil, salt, and italian seasoning.
  5. Place in oven for 15 minutes.
  6. While tomatoes and onions are roasting peel garlic.
  7. After 15 minutes remove pan from oven, stir onion and tomatoes. Spread back out into a single layer.
  8. Add garlic cloves to tomatoes and onions.
  9. Roast an additional 10-15 minutes.
  10. Remove from oven. Place all ingredients in a food processor and blend until desired consistency. Add more salt if needed.
  11. Serve with your favorite pasta or let cool and store in refrigerator until ready to reheat and serve.
